 INGREDIENTS

  • 75 g ground almonds

  • 140 g plain flour 

  • 90 g lard or butter

  • 50 g icing sugar

  • 1 teaspoon ground cinnamon


Preparation

  1. Preheat the oven to 170°C/gas mark 4. Spread the ground almonds and flour in a baking tray and toast in the oven for about 15 minutes or until light brown, stirring the flour and almonds every few minutes so that everything toasts evenly. Leave to cool down to room temperature.

  2. Mix together the lard or butter, icing sugar, ground cinnamon and toasted flour until it comes together in a dough, this should take about 5 minutes. You can use a food processor for this or do it by hand. 

  3. Use a rolling pin to roll out the dough on a floured surface to a thickness of 2 cm. You can either cut it into squares with a knife or use a cutter to cut out biscuit shapes, squeezing them a bit between your hands

  4. Transfer to a baking tray and bake in the preheated oven for about 14 minutes, until they are crisp and golden. Allow to cool. Traditionally these biscuits would be wrapped in little parcels of thin greaseproof paper and given as gifts.
